Charcoal grills are available in various designs such as the popular kettle grill. These grills have the advantage that you can adjust the height of the grill grate on many models and thus determine how close your grilled food is to the coal. Another model is the smoker, which you use for long-cooking meat.

A charcoal grill also contributes to the atmosphere of a barbecue party. The fire crackles and flickers like a campfire. And if it’s dark and cooler later in the evening, you and your guests can warm up by the still glowing grill.

Disadvantages of Charcoal

Although charcoal grills cook your food through quickly, you must be vigilant while grilling as it is an open fire. Especially if there is also alcohol on your barbecue evening, you should be careful near the barbecue so that no flare-ups develop. In addition, smoke can form that attacks your mucous membranes. Therefore, make sure there is sufficient ventilation, place the grill in an open area and watch the wind direction. This minimizes the risk of fire and smoke.

Your clothes can also take on the smell of smoke if the wind is unfavorable. When grilling greasy food, the fat often drips onto the charcoal because the food is directly above the charcoal. There is a risk of a flash fire here. This can be remedied, for example, by using an aluminum tray and regularly dabbing the grilled food. Another disadvantage of charcoal grills: A charcoal grill takes longer to cool down than other grills.

Light the charcoal grill

You can light a charcoal grill with either a grill lighter or a chimney starter. If you decide to use the grill lighter, first remove the grill grate and open the vents. Then you fill the charcoal or briquettes on the charcoal grate and arrange them like a pyramid. Distribute the cube-shaped grill lighters under the charcoal.

If you are using a lighter gel, spread this over the charcoal and leave it on for a while. You now light your grill lighter using a match or a lighter. When the embers are flickering, there is a white layer of ash and the grill lighter has burned, you can start grilling.

Alternatively, you can use a chimney starter filled with charcoal or briquettes. Place the chimney starter on the charcoal grate and open the ventilation slides. For example, you can light the charcoal with newspaper that you place under the charcoal. You can also light the charcoal with a grill lighter. When the charcoal is glowing through, pour it out of the chimney starter onto the charcoal grate.

Tip: Always use dry charcoal for grilling to keep the smoke as low as possible. You can let charcoal dry in the sun. If your briquettes are wet, you cannot use them as they will crumble.

Regulate temperature

Unlike gas grills or electric grills, it is more difficult to determine the exact temperature with conventional charcoal grills. High-quality kettle grills usually have a thermometer mounted on the lid, on which you can read the temperature. 

Alternatively, some grill professionals carefully determine the temperature by hand by holding it about 13 cm above the grill. If it becomes painful after about two to three seconds, the grill has temperatures of around between 230 °C and 300 °C. But be careful with this method to avoid burning yourself. Also, of course, it’s imprecise.

Tip: It is safer to use a grill thermometer.

You can influence the temperatures at which your grilled food cooks by moving the grate . At a low level near the charcoal there is more heat than at a higher level. If your grilled food is cooking too quickly on the outside, move the grate a little further up.

Clean and extinguish charcoal grill

If you have grilled the food and you no longer need the grill, you have to put it out properly. To do this, close the ventilation slides that you opened when cheering on. If your grill has a lid, close the ventilation here as well. By closing, no more oxygen gets to the charcoal and it cannot continue to burn. When the fire is out, open the lid to let the charcoal cool down. Finally, you can remove the remains of the cooled charcoal and dispose of it in the compost.

Note: Charcoal briquettes that have cooled down must be disposed of with household waste, as they are not made entirely of wood.

Once you have removed the remains of the charcoal, you can start cleaning your grill. If you have grilled with briquettes, clamp a glowing briquette in your grill tongs and rub it over the grate to remove burnt-on food residue. Clean the grate with a wire brush and brush out the grill bowl with a broom. After a few barbecue evenings, you can also clean the grill with hot water.
